You can make anything in life into an “occasion.” We did on Sunday night; Matt and I had my mom over for dinner to “celebrate” her foray back into the working world after retiring in June. Having something to offer your guests as they arrive is a welcoming touch and since the weekend had been gray, rainy, and cold (and the thought of going back to work is not much different), chicken and waffles seemed like the perfect comfort food. This could be a great appetizer to serve on Super Bowl Sunday, too.
This appetizer is quick and easy. You’ll need mini Eggo waffles, chicken nuggets, ,and maple syrup. I used frozen popcorn chicken from Publix, but you could pick-up chicken nuggets from your favorite restaurant to use, too. Cook both according to the packages, layer the chicken on top of the waffle, and secure with a toothpick. Arrange them on a platter and finish things off by drizzling your creations with maple syrup.

Don’t forget about saving 10 minutes to set a pretty table. Start building an eclectic collection of glassware, cloth napkins, napkin rings, chargers, etc. An inexpensive source is your local furniture consignment/antique store. I found some great ceramic duck napkin rings for $2 each at the Shoppes of Avondale .
Keeping the charger and plate simple allows the printed napkin and duck ring to be the focus, and the best part is, it only takes 5 minutes to set a pretty table.
